VEGETARIAN NORI ROLLS

Ingredients

  • 1 can Polar 13.75oz Quartered Artichoke Hearts

  • 1 can Polar 4oz Mushroom Slices

  • 1 large onion diced

  • 1 tbsp garlic minced

  • ¼ cup butter

  • 1 cup zucchini grated

  • 12 large eggs

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup grated Romano cheese

  • nori sheets
     

Thinly slice the following:

  • sweet red pepper

  • green bell pepper

  • carrots

  • lettuce leaves

  • 1 avocado

  • parsley

  • hummus

  1. Spread hummus on nori sheets, pile the vegetables on, roll up tightly and slice into 1-2” slices.
