Ingredients

1 Tbsp Vegetable Oil

2 Chicken Breast - cut into bite-size pieces

2 garlic cloves, minced

1 Tbsp grated ginger

2 Tbsp red curry paste
-
1/2 Cup chicken broth
-
1/2 tsp. ground turmeric
-
1/2 cup POLAR Sliced Bamboo Shoots
-
1 1/2 Tbsp POLAR Oyster sauce
-
1/2 Cup of red bell peppers
-
1 cup POLAR Coconut Milk
-
1 cup POLAR Pineapple Chunks - drained

12 red cherry tomatoes

In a large pan or wok warm up vegetable oil, then add the chicken and cook all the way through.

Next, add the ginger and garlic, cook for a few minutes then add the curry paste stir to combine with chicken.

Then add the chicken broth, turmeric, bamboo shoots, oyster sauce, and red bell peppers.

Under medium heat cover and simmer for about 10 minutes.

Add the coconut milk and stir, next add the cherry tomatoes and pineapple chunks. Cook for another 5-8 minutes or until the tomatoes are soft.

Serve warm with white or basmati rice.
