Ingredients
Omelet:

2 eggs
-
3-4 pieces POLAR Marinated Quartered Artichokes
-
Handful of fresh spinach
Sauce: -
5-6 cherry tomatoes
-
1 tbsp POLAR Sweet & Hot Sauce
-
1 small clove of garlic
-
¼ cup shredded mozzarella
-
2 tsp grated parmesan
-
Salt and pepper to taste
Optional: handful of walnuts

Preheat oven to 350 degrees F. Prepare muffin tin with cooking oil spray

Pulse omelet ingredients in small food processor and spoon ingredients into muffin tin.

Bake until desired doneness (about 20 minutes for fully cooked through eggs).

Add a sprinkle of mozzarella on top and place back in warm oven for a few minutes while you make the sauce

For the sauce: pulse ingredients in food processor
-
To serve: place omelet on top of a spoonful of sauce
