SIMPLE TUNA MELT

Ingredients

2 cans POLAR All Natural Solid White Albacore 5 oz – drained and flaked

¼ cup of Polar Jalapenos, finely chopped
-
¼ cup low-fat mayonnaise (can use regular mayonnaise as well)

1-2 tbsp. fresh lemon juice (or 1 tsp. red wine vinegar)
-
1 large celery rib, finely chopped
-
1 red onion, finely chopped
-
1 tbsp. parsley, finely chopped
-
Seasoning salt
-
Lemon pepper or black pepper
-
4 slices of American cheese
-
2 large tomatoes, sliced
-
4 slices of wheat, sourdough, or pumpernickel bread

Set oven heat to broiler

In bowl, mix tuna, mayo, lemon juice (or red wine vinegar), celery, parsley, and red onions
-
Add in salt and pepper to taste
-
Place the bread slices on a baking sheet and broil for 1 minute or until lightly toasted
-
Remove from heat, divide and spread the tuna mixture on top of each bread slice
-
Place one cheese slice over the tuna, evenly distribute tomato slices on top, then add another slice of cheese on top
-
Place in oven and broil for about 3 minutes, or until the cheese is melted
