SIMPLE TUNA MELT

Ingredients

  • 2 cans POLAR All Natural Solid White Albacore 5 oz – drained and flaked

  • ¼ cup of Polar Jalapenos, finely chopped

  • ¼ cup low-fat mayonnaise (can use regular mayonnaise as well)

  • 1-2 tbsp. fresh lemon juice (or 1 tsp. red wine vinegar)

  • 1 large celery rib, finely chopped

  • 1 red onion, finely chopped

  • 1 tbsp. parsley, finely chopped

  • Seasoning salt

  • Lemon pepper or black pepper

  • 4 slices of American cheese

  • 2 large tomatoes, sliced

  • 4 slices of wheat, sourdough, or pumpernickel bread

Directions

  1. Set oven heat to broiler
     

  2. In bowl, mix tuna, mayo, lemon juice (or red wine vinegar), celery, parsley, and red onions
     

  3. Add in salt and pepper to taste
     

  4. Place the bread slices on a baking sheet and broil for 1 minute or until lightly toasted
     

  5. Remove from heat, divide and spread the tuna mixture on top of each bread slice
     

  6. Place one cheese slice over the tuna, evenly distribute tomato slices on top, then add another slice of cheese on top
     

  7. Place in oven and broil for about 3 minutes, or until the cheese is melted
