LEMON COCONUT TEA CAKE

Ingredients

2 ¼ cup flour

¾ cup granulated sugar

1 tbsp baking powder

¼ tsp salt

1 tbsp lemon zest
-
¾ cup sweetened coconut
-
2 tbsp vegetable oil
-
2 eggs
-
¾ cup POLAR Coconut Milk
-
¼ cup lemon juice
Optional: Diced pecans

Preheat oven to 350 degrees F. Grease and flour one 9x5 inch loaf pan

Beat oil, eggs, and coconut milk in medium bowl until frothy with electric mixer. Set electric mixer aside and stir in lemon juice by hand.

Combine dry ingredients in another bowl – sift or stir together to ensure even distribution.

Pour wet ingredients into dry ingredients and stir by hand. Add pecans

Spoon batter into prepared pan

Bake about 50 min to 1 hour – or until toothpick inserted into center comes out clean
