CALICO SALAD

Ingredients

  • 1 package (16 oz) frozen corn, thawed

  • 1 package (16 oz) frozen peas, thawed

  • 1 can (8oz) POLAR Sliced Water Chestnuts, drained

  • 1/4 cup chopped green onions

  • 1 jar (4 oz) diced pimentos, drained OR ½ cup diced small sweet red bell pepper

  • 1/2 cup mayonnaise

  • 3 Tbsp Parmesan cheese

  • 3 Tbsp milk

  • 1 Tbsp lemon juice

  • 1/2 tsp salt

  • 1/8 tsp pepper

  • 1/2 cup slivered almonds

Directions

  1. In a large bowl, combine the corn, peas, water chestnuts, onions and pimentos
     

  2. In another large bowl, combine the mayonnaise, Parmesan cheese, milk, lemon juice, salt and pepper to make the sauce/seasoning.
     

  3. Pour sauce over vegetables; toss to coat.
     

  4. Cover and chill for at least 2 hours. (Make sure you don't skip this step. The salad needs time for the flavors to bend.)
     

  5. Just before serving, add the almonds and toss to combine.
