ALMOND THUMBPRINT COOKIES

Ingredients

  • 1/2 cup Polar Premium Fruit Preserves

  • 2 cups bread flour

  • 2/3 cup sugar

  • 1/8 cup grounded raw almonds

  • 1 cup unsalted sweet cream butter softened

  • 1/2 tsp. almond extract

Directions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine bread flour, sugar, ground raw almonds, unsalted sweet cream butter and mix. Add almond extract and mix well. At this point it will look like a crumbly mixture.

  3. Knead the cookie dough for about 2 minutes. This will help incorporate all the ingredients and change the texture of the dough which kind of resembles sand clay. If your dough seems dry, you may add 1 tablespoon of milk.

  4. Form a small dough ball (3/4 – 1 inch) and place onto ungreased cookie sheet.

  5. To make an indentation on top of each dough ball, you can use your thumb or use the bottom of your measuring spoon (rounded) by pressing onto the top center gently.

  6. Fill the indentation with your favorite Polar preserve.

  7. Bake 10 minutes. Let it cool down before enjoying.
